Ingredients (2-3 persons)
2 Nectarines
20 Cherry tomatoes
125 g Mozzarella
3 tbs Broad-leaved parsley (finely chopped)
1 tbs Lemon zest
1 tbp Olive oil
Pepper
Directions
Slice up the nectarines and cut the tomatoes in halves. Arrange on a large plate with mozzarella torn into chunks. Add the olive oil and gently toss the salad. Top with a mix of finely chopped parsley and lemon zest. Serve with fresh ground black pepper.
