Koldskål med Kammerjunkere

As a Dane living abroad you have to learn making your own "koldskål" and "kammerjunkere" when the temperature hits 30°C.
"Koldskål" is a refreshing dessert/snack based on butter milk, egg yolks, sugar, vanilla, and lemon. "Kammerjunkere" are a kind of butter cookies and, along with fresh strawberries or other berries in season, absolutely necessary to complete this dish.


Ingredients - "Koldskål" (2 persons)
3 Egg yolks
30 g Sugar
1 tsp Vanilla sugar
1/2 L Butter milk
2 tbs Lemon juice
1-2 tsp Grated lemon zest

Directions - "Koldskål"
Place the whole eggs in the zink and rinse with boiled water (to remove eventual chances for salmonella infections) and divide the eggs into whites and yolks. Store the whites for other purposes (e.g. meringue) and whip the yolks with the two types of suger until white. Add butter milk and adjust with lemon juice and -zest.
Serve cold and topped with "kammerjunkere" (see below), fresh berries, and eventual finely chopped fresh mint.

Ingredients - "Kammerjunkere" (40-50)
150 g Flour
1/2 tsp Baking powder
40 g Sugar
1/4 tsp Cardamom
2 tsp Vanilla sugar
2 tsp Grated lemon zest
1 Egg
1/4 dL Butter milk

Directions- "Kammerjunkere"
Heat up the oven to 200°C. Mix all the ingredients (the dough will end up sticky) and place, by using two teespoons, 20-25 small balls on a baking sheet covered with parchment paper. Bake for 10 minutes. Divide the balls in two halves (horizontally) while still warm, turn the oven down to 170°C, and bake the halves with the inside facing up for another 10-15 minutes.

  1. That's so true!! What is summer without Koldskål & Junkere?
    Looks like a very delicious recipe for the kammerjunkers. Nam! Nam!
    I have a small comment if you don't feel like baking ...
    Fast Kammerjunkers:
    One loaf of Dry bread
    2 dl sugar

    Melt the sugar on a pan - keep an eye on it, cause it burns real fast ;)
    Cut the bread into small squares 1x1cm.
    Add the breadsquares to the caramel sauce. Be sure to turn the bread well into the caramel.
    Remove it from pan onto a buttered piece of parchment paper. And let it cool of.
    And voila here you have some fast and crunchy junkers ;)
