Persillepesto

Denne pesto baseret på persille og mandler er blandt mine helt store favoritter. Den er yderst velsmagende, færdig på 2 sekunder og har uendelige anvendelsesmuligheder - f.eks. under din favoritost på et stykke ristet brød gnedet med lidt frisk hvidløg eller som pizzatopping sammen med en mozzarella og grillede peberfrugter.



Ingredienser
1 Håndfuld bredbladet persille
40 g Mandler
1 spsk Revet parmesan
1 dL Olivenolie
4 spsk Citronsaft
Salt/Peber

Fremgangsmåde
Blend alle ingredienserne og smag til med salt og peber.

Hummus

I've never met anyone who didn't like hummus and I can probably count the hummus-dislikers that I'll meet in the future on one hand.
Hummus is fantastic, its great with hundreds of things (e.g. salads, sandwiches, fried fish... you name it) and is one of the easiest things to make in like 2 minutes (as long as you use canned chickpeas or from the time you have them soaked and boiled).
On a festival  earlier this summer, I had a sandwich with hummus and strawberries, which was absolutely fantastic and I'll definately repeat the succes next year when the strawberry season kicks in. Here in august, as other berries like raspberries, black- and blueberries are just perfect, it could be an idea to make a hummus/berries sandwich with some of those.....


Ingredients
250 g Chickpeas (ready to use - that is, canned or soaked and boiled)
2 tbs Tahin
2 tbs Olive oil
4 tbs Lemon juice
1 Garlic glove (or not - as you like)
1 tsp Ground cumin
Salt/pepper

Broad-leaved parsley (topping)
Paprike (topping)

Directions
Blend all the ingredients and season with salt & pepper.
Arrange in a small bowl, springle with a litte olive oil, and top with torn broad-leaved parsley and paprike. Serve and enjoy!

Mangochutney

Home made mango chutney completes almost every indian meal - but is also good instead of regular marmelade with blue cheese.

Ingredients 
1 Mango
150 g Sugar
1 1/2 dL Vinegar
1 1/2 dL Water
3 cm Ginger
2 Garlic gloves
1/2 tsp Cayenne pepper
1/2 tbs Mustard seeds
4 Cloves

Directions
Finely chup up ginger and garlic. Also chup up the mango, but in slightly larger pieces than the ginger and garlic. Heat up a large sauté pan and fry cayenne pepper, cloves, and mustard seeds for 2 minutes. Add ginger and garlic and fry for another 2 minutes before adding mango, sugar, vinegar, and water. Simmer at low heat without lid for apprimately 30 minutes, transfer to a hot sterile glass jar and seal.

Sommerruller

This is just one variation of Vietnamese summer rolls which are always a succes!
- You can also try to mix with rice noodles, avocado, fresh mint, thai basil, bean sprouts, scrimp, tofu....and so on and on...


Ingredients (4 rolls)
4 Rice papers
1 Carrot
1/4 Cucumber
1/2 Mango
4 tbs Coriander (chopped)
2 tbs Peanuts (chopped)
2 tbs Sweet chili sauce
1 tbs Lime juice
1 tsp Fish sauce

Directions
Cut the carrot into fine shreds (julienne) and slice up the cucumber and mango into slightly thicker strips than the carrot. Mix a dressing of Sweet chili sauce, lime juice, fish sauce, and peanuts.
Soak the rice papers (one at a time) in cold water untill soft and dry off excess water with a clean tea towel.  Arrange carrot, cucumber, mango, and coriander in the middle of each rice paper. Fold the bottom half of the rice paper over the filling. Holding it firmly in place, fold in the sides of the rice paper and roll the entire pile up to close the top. 
Cut the spring rolls in two halves and serve with the dressing.

Myntedip

This mint dip suits indian dishes very well. You can adjust the spice-level as you wish, but very spicy in combination with cold yogurt and a curry is my favorite.

Ingredients 
A large handfull of fresh mint
1 Green chili
1/2 Lime
4 tbs oil (unflavoured)
salt/pepper

Directions
Blend mint, chili, lime juice, and oil. Adjust with salt & pepper.

Bonus
"Mint helps eliminating toxins, reduces the growth of fungus in the body, and is said to be beneficial against astma and other allergic conditions.
Moreover is mint able to relieve headaches and crushed mint leaves help in whitening teeth."
