Kulfi med pistacienødder og syltet ingefær

Kulfi er en is der spises i en stor del af asien og eftersigende oprindeligt stammer fra Indien. Den er lettere sej, sød, blød og perfekt cremet - alt takket være den kondenserede mælk der efter min mening er  ikke mindre end et vidunderligt produkt.


Ingredienser
4 dL kondenseret mælk
2 dL piskefløde
50 g sukker
2 spsk pistacienødder, let ristet på en tør pande
2-3 kugler syltet ingefær, fint hakket

Fremgangsmåde
Pisk den kondenserede mælk med en stavblænder til den bliver let luftig. I en anden skål piskes fløden  til let skum sammen med sukkeret. Bland fløden med den kondenserede mælk og tilsæt til sidst pistacienødder og ingefær. Bland godt og frys i minimum 6 timer.

Mangochutney

Home made mango chutney completes almost every indian meal - but is also good instead of regular marmelade with blue cheese.

Ingredients 
1 Mango
150 g Sugar
1 1/2 dL Vinegar
1 1/2 dL Water
3 cm Ginger
2 Garlic gloves
1/2 tsp Cayenne pepper
1/2 tbs Mustard seeds
4 Cloves

Directions
Finely chup up ginger and garlic. Also chup up the mango, but in slightly larger pieces than the ginger and garlic. Heat up a large sauté pan and fry cayenne pepper, cloves, and mustard seeds for 2 minutes. Add ginger and garlic and fry for another 2 minutes before adding mango, sugar, vinegar, and water. Simmer at low heat without lid for apprimately 30 minutes, transfer to a hot sterile glass jar and seal.

Bananlassi

If you are just a little hungry this banana lassi is perfect!

Ingredients (1 person)
1/2 Banana
2 dL Yogurt (1%)
1-2 tsp Acacia honey
2 tsp Lemon juice
1/5 tsp Cardamom

Directions
Blend all the ingredients and pour into a glass with ice cubes. Enjoy your lassi right away!




Bonus
Bananas contain relatively high amounts of vitamin B6, vitamin C, and potasium, where the latter is explored by athletes to quickly replenish electrolytes during and after physical training. Banana juice is furthermore used to treat both kidney stones and high blood pressure.

Ananas-Mynte Lassi

This is heavy Freshness!

Ingredients (1 person)
100 g Pineapple
1 dL Natural yogurt (1%)
10 Mint leaves
1-2 tsp Acacia honey

Directions
Blend all the ingredients and pour into a glass with ice cubes. Enjoy your lassi right away!

Bonus
Pineapple is a good source of both vitamin C and B1 plus manganese. Furthermore, it is claimed that pineapple is able to relieve pain and beneficial for some intestinal disorders.

Myntedip

This mint dip suits indian dishes very well. You can adjust the spice-level as you wish, but very spicy in combination with cold yogurt and a curry is my favorite.

Ingredients 
A large handfull of fresh mint
1 Green chili
1/2 Lime
4 tbs oil (unflavoured)
salt/pepper

Directions
Blend mint, chili, lime juice, and oil. Adjust with salt & pepper.

Bonus
"Mint helps eliminating toxins, reduces the growth of fungus in the body, and is said to be beneficial against astma and other allergic conditions.
Moreover is mint able to relieve headaches and crushed mint leaves help in whitening teeth."

Curry med Røde Linser & Squash

I love indian food - especially their spices and heavy curries. This dish is simple, medium spiced, and fantastic in combination with cold yogurt and mint dip.

Ingredients (4 portions)
1 tbs oil (unflavoured)
1 tsp Cayenne pepper
1 tbs Garam marsala
2 cm Fresh ginger
1 Garlic glove
1 Onion
1 tbs Tomato purée
2 dL Coconut milk
7,5 dL Water
1 tbs Sugar
1/4 Lemon
2 dL Red lentils
1 Courgette
Salt

Basmati rice
Broad-leaved parsley
1 Spring onion
Bread (e.g. Naan)
Yogurt (unflavoured)
Mint dip

Directions
Chup up ginger and garlic into small pieces. Slice the onion and courgette.
Heat up the oil in a pot and fry cayenne pepper and garam marsala for a few minutes a high heat. Add ginger and garlic, fry for another 2 minuttes, before adding tomato purée and frying for 2-3 minuttes. Add coconut milk, water, sugar and lemon juice, turn down the heat, and simmer for 10 minuttes under a lid. Add red lentils and simmer for another 15 minuttes or until the lentils are slightly overcooked. 5 minuttes before serving, add the courgette and adjust with salt.
Serve on basmati rice and top with finely chopped broad-leaved parsley and spring onion. On the side a white bread of choice, unflavoured yogurt, and mint dip.
